Tilapia & Zucchini Meal
Here's another great meal for you to try during the 24 Day Challenge. I know I was constantly looking for meal ideas when I was trying to stick to the 24 Day Challenge diet guidelines.
This is a tasty idea that doesn't take much time.
- Heat a grill pan to medium high heat and add one tablespoon of coconut oil
- Add sliced zucchini (optional squash too) to pan
- Don't crowd pan with zucchini and squash
- Grill until golden brown on one side, then flip
- Add tilapia to pan and another tablespoon of coconut oil
- Add salt and pepper to taste
- Add dried thyme to tilapia
- Grill tilapia on both sides until fish is white and flaky
